Why is the El Salvador Tres Ninas rare? You see, this coffee which is grown on the Illamatepec Mountain Ranges is naturally processed. It is sun-dried in its cherry giving the beans time to fully develop the complexity of their flavors then, pulped naturally to accent its sweetness. The process is lengthy and labor-intensive which is why very few coffees are dried and pulped this way.
This type of coffee is grown, harvested, and milled at Tres Ninas --a collective of five farms which has been in operation for more than a century. A hundred years is a long time to master the art and science of growing and processing coffees making the produce of the Tres Ninas excellent in every way.
